BREAD & PASTRY

TEAM CHAMPIONSHIP

is the outgrowth of a relationship between Carymax, LLC, and the New York and New Jersey Retail Bakers' Assocations. The Championship brings new excitement to the biennial Atlantic City Bakery Expo.

 

The nation's finest bakers and pastry chefs will compete for a $50,000 prize package. One team will be the National Bread and Pastry Team Champions!!

 

The theme for the 2008 Championship is MUSIC, which will be reflected in the championship's two required showpieces.

With the 2006 National Bread and Pastry Team Championship Theme "Invention", Team Smoake-DeWitt, Gold Medal Winners, created a chocolate and sugar showpiece that depicted inventions, while Team Stamm-Klocko, silver medalist, used bread as their expressive medium.

Using the 2004 American History theme, Team Ramirez/Mullaney created a stunning Chocolate and Sugar Showpiece representation of the Statute of Liberty that garnered them the Judge's Favorite Chocolate Sugar Showpiece Award.

 

The Judge's Favorite Bread Showpiecetitle went to team Abdullah and Hitz for their depiction of indigenous symbols.

The rules are simple--over two (2) days and fourteen (14) hours, each team must produce:

  • A bread showpiece

  • A pastry showpiece, incorporating sugar and chocolate

  • Two (2) different types of bread

    • One baguette

    • One baker's choice
  • An entremet
  • An entremet glacè
  • A plated dessert and
  • Two viennoiserie out of the same dough.
